French Onion Turkey Burgers

I had a life-changing moment, recently. In a split-second, my entire life was changed forever. For the first time in years,  I weighed myself. I was horrified at the number staring back at me.  Seriously!! Are you kidding me?!  Maybe the scale was broken. I stepped off and tried it again - same number.  I gave it another shot - same number. That is when I had my  ah ha moment, as Oprah would call it. My inner fat chick died right then and there. In the past, my inner fat chick would have said, " OK, tomorrow you are going on a (pick one - I have tried them all)  low carb diet, cabbage soup diet, juice cleanse,  sugar- free diet,  starvation diet,  liquid diet, a food combining diet, so that means you need to go on an  inhale- everything- you- can- get- your- hands-on-while-you-have-the-chance-pig-out tonight. You can see why I really needed to get rid of her.

I am now trying to make small, healthy changes to my diet. I am finally beginning to learn the meaning to the word moderation. I am filling myself up on tons of fresh fruits and veggies. I am drinking lots of water and herbal tea. I am exercising everyday.  I am watching my portion sizes. I am making smart choices. I am cooking delicious, healthy,  satisfying meals , without sacrificing any flavour. I am not depriving myself, ever again! I am taking control of my life, and it feels amazing!

 I am finally beginning to realize that eating healthy doesn't mean you have to give up flavour. Case in point -healthy turkey burgers that taste just like a bowl of comforting French Onion soup. These burgers are amazing. Turkey burgers can be really dry, but the caramelized onion and cheese keep these really moist. Caramelizing the onions is a bit time-consuming - they will take about an hour, but it is sooo worth it.

French Onion Turkey Burgers
(serves 4)

3 large onions, sliced thinly in half moons
a couple of sprigs of fresh thyme, leaves only
olive oil and butter for cooking
1 oz. cognac

1 lb. extra lean ground turkey
1 Tbsp. Worcestershire sauce
1Tbsp. Dijon mustard
about 1 cup grated Gruyere cheese,divided
salt and pepper, to taste
4 high fiber, 100 calorie, extra- thin buns

Heat a little olive oil and butter in a large pan over medium-low heat. Add the onions, thyme and a sprinkle of salt and pepper. Cook the onions until softened and deep brown in colour. I cover with a lid for the first half of the cooking. Don't go too far away, these will need to be stirred every few minutes, especially toward the end of the cooking process. De glaze the pan with the cognac, cook until liquid is evaporated. Let cool.

Preheat oven to 400 F. Combine, turkey, onions, Dijon, Worcestershire, 1/2 cup of Gruyere, salt and pepper. Form into 4 patties. Place on a baking sheet sprayed with cooking spray. Bake until cooked through and temperature is 165 F in the center, about 20 minutes, flip once during cooking. Sprinkle the remaining 1/2 cup of cheese over the split buns. Heat in oven until the cheese is melted.

2 Tbsp. brown sugar
2 Tbsp. honey
2 Tbsp. soy sauce
2 Tbsp. rice vinegar
1 tsp. toasted sesame oil
1 tsp. Sriracha
1/2 tsp. salt
black pepper
1 lb. pork button bones
sliced scallions and toasted sesame seeds for garnishing
Pour all ingredients in a large plastic zip lock bag. Marinade in fridge 6-8 hours. Preheat oven to 400 F. Bake on a parchment-lined rimmed baking sheet 40-50 minutes, or until cooked thoroughly. Turn often during cooking.

Light Fettuccine Alfredo with Shrimp, Sun Dried Tomatoes and Roasted Garlic

Traditionally, Fettuccine Alfredo is a simple dish made with heavy cream, lots of butter, lots of Parmigiano Cheese and pasta.  Delicious? Yes!   Figure friendly? No!   A couple of months ago, I would have had no problem inhaling a big bowl of this buttery, cheesy goodness, but times have changed and I am now really trying to be aware of every bite of food that I eat. Whenever I am contemplating eating higher calorie foods, I ask myself - " Is it worth the calories?" The answer is almost always no. I have discovered that I can make a healthier, lower calorie version of almost any dish that I am craving, that tastes just as good- if not better- than the original.

Pasta alla Carbonara with Mushrooms

Pasta alla Carbonara - literally translated is"Coal Miner's Spaghetti" in Italian. Carbonara is a classic Italian dish  that is quick, relatively simple and requires only a few key ingredients; pasta, cured pork, eggs and cheese.
Timing is everything when it comes to making the perfect carbonara. Toss the hot pasta with the raw eggs and cheese, add a bit of the starchy cooking liquid and stir vigorously until a creamy sauce is achieved. This is the tricky part -  the pasta has to be as hot as possible, but removed from the heat or it will scramble the eggs. If the pasta isn't hot enough, the eggs won't be cooked and you will be left with a soupy mess. Salmonella is never a popular guest at a dinner party.
