Greek Pasta Salad

I LOVE Greek food! Beautiful, simple ingredients that are just jam-packed with flavour.  Sweet, juicy grape tomatoes, salty feta, crunchy peppers and cucumbers, rich earthy Kalamata olives. This refreshing pasta salad really packs a punch!


Greek Pasta Salad
serves 4-6

Dressing:
1 Tbsp. fresh lemon juice
the zest of one lemon
1/4 cup oil-packed sun-dried tomatoes, patted dry
4 Tbsp.  white wine vinegar
4 Tbsp. extra virgin olive oil
4 Tbsp. canola oil
1- 2 tsp. fresh oregano leaves or 3/4 tsp. dried
salt and pepper to taste

Puree all dressing ingredients in a  food processor or blender.


8 oz. uncooked small pasta ( I used small shells)
8 oz. red and yellow grape tomatoes, sliced in half
1/2 red bell pepper, diced
1/2 red onion, diced
4 oz, pitted Kalamata olives
small handful chopped fresh parsley
2 small cucumbers, diced
4 oz. brine packed feta cheese, crumbled
